Classic French Raspberry Clafouti

Instructions

Preheat the oven to 350 F and butter a 9-inch square or round baking dish.

Spray a baking sheet, arrange raspberries, and roast for 15 to 20 minutes until tender; cool for 5 minutes.

In a large bowl, whisk together milk, cream, flour, eggs, sugar, vanilla extract, and salt until the batter is smooth.

Pour 3/4 cup of batter into the prepared dish and bake for 2 to 4 minutes until slightly set.

Arrange the roasted raspberries over the partially baked batter, then pour the remaining batter over the berries.

Continue baking for 35 to 40 minutes, or until a knife inserted into the center comes out clean.

Sprinkle with confectioners' sugar and serve warm.
