Classic French Raspberry Clafouti

Instructions

  1. Preheat the oven to 350 F and butter a 9-inch square or round baking dish.

  2. Spray a baking sheet, arrange raspberries, and roast for 15 to 20 minutes until tender; cool for 5 minutes.

  3. In a large bowl, whisk together milk, cream, flour, eggs, sugar, vanilla extract, and salt until the batter is smooth.

  4. Pour 3/4 cup of batter into the prepared dish and bake for 2 to 4 minutes until slightly set.

  5. Arrange the roasted raspberries over the partially baked batter, then pour the remaining batter over the berries.

  6. Continue baking for 35 to 40 minutes, or until a knife inserted into the center comes out clean.

  7. Sprinkle with confectioners' sugar and serve warm.
