Classic French Pork Rillettes

Instructions

  1. Preheat the oven to 325 F.

  2. Combine all ingredients in a large ovenproof baking dish.

  3. Cover the dish tightly with foil or a lid.

  4. Bake for 3 hours, checking occasionally to ensure the meat stays moist; add water if necessary.

  5. Remove from oven and let cool, covered, for 30 to 45 minutes until warm.

  6. Discard the bay leaf, duck bones, and any dried meat pieces.

  7. Shred and stir the meat and fat with a fork until a creamy, chunky spread forms.

  8. Transfer the rillettes to a serving pot and level the surface.

  9. Pour any remaining fat from the cooking dish over the rillettes.

  10. Chill for at least 24 hours before serving.
