Instructions

  1. Toast cumin, fennel, and coriander seeds in a dry skillet over medium heat for 2 minutes until fragrant, then cool and grind.

  2. Mix the ground seeds with paprika, cayenne pepper, and cinnamon.

  3. Combine ground lamb, olive oil, spice mixture, herbs, garlic, and salt in a large bowl, then mix thoroughly.

  4. Form the seasoned lamb into patties or fill sausage casings; chill before cooking.

  5. Cook patties or sausages by frying until done.

  6. Serve in a bun, pita, or Middle Eastern flatbreads.
