Classic French Galette Des Rois
A traditional French epiphany cake features puff pastry with a rich homemade almond cream filling.

Instructions

Preheat oven to 425 F.

In a food processor, combine the first seven ingredients until a smooth cream forms.

Roll out puff pastry sheets and cut two 11-inch circles.

Place one pastry circle on a parchment-lined baking sheet; spread almond cream filling within 1 1/2 inches of the edge, optionally hiding a bean.

Top with the second pastry circle, crimp edges to seal, and score a decorative pattern on top without piercing the filling.

Brush pastry with beaten egg.

Bake for 15 minutes.

Dust with powdered sugar, then bake an additional 10 to 12 minutes until golden brown.

Cool on the baking sheet for 20 minutes.

Cut into slices; crown the person who finds the hidden bean with a gold paper round.
