Instructions

  1. Soak cod for three days, changing water twice daily.

  2. Simmer cream with garlic, bay leaf, thyme, and cloves for 6-8 minutes until garlic is tender. Remove the bay leaf, then blend the mixture until garlic is pureed.

  3. Drain the cod.

  4. Simmer the cod in water until cooked, then drain again.

  5. Combine drained cod, garlic cream, and mashed potatoes in an electric mixer.

  6. Mix on low speed for 2 minutes until well combined. Beat an additional 30 seconds, slowly adding olive oil; do not overbeat.
