Classic Eggs Florentine

Eggs Florentine is a quick and elegant breakfast or brunch dish, similar to eggs Benedict but featuring wilted spinach and poached eggs on English muffins with hollandaise.

Instructions

  1. Preheat the grill and bring water to a boil with vinegar for poaching eggs.

  2. In a hot pan with olive oil, wilt spinach for 1 to 2 minutes.

  3. Drain the wilted spinach, press out excess liquid, then return it to the pan, divide into four portions, and cover to keep warm.

  4. Gently poach eggs in simmering water for about 3 minutes until whites are set and yolks are soft.

  5. Concurrently, split and toast English muffins on the grill, butter them, and place on warmed plates.

  6. Arrange a portion of warm spinach on each muffin half, then top with a poached egg.

  7. Finish each with 1 to 2 tablespoons of hollandaise sauce and grated nutmeg, serving immediately.
