Classic Double Crust Blueberry Pie

Instructions

  1. Preheat the oven to 425 F.

  2. Prepare and chill pie pastry if homemade.

  3. Combine sugar, flour, salt, cinnamon, lemon juice, lemon zest, and blueberries in a large bowl.

  4. Roll out half the pastry, line a 9-inch pie pan, and trim edges.

  5. Pour the blueberry mixture into the crust and dot with butter.

  6. Roll out the remaining pastry.

  7. Cover the filling, trim, turn under the edge, and crimp the top crust.

  8. Blend egg yolk with cream or milk, then brush over the top crust and sprinkle with cinnamon or vanilla sugar.

  9. Cut several vents in the top crust.

  10. Bake at 425 F for 40 minutes, or until golden brown, shielding edges if needed.

  11. Cool the pie on a rack before slicing and serving.
