Classic Croque-Monsieur (French Grilled Ham & Cheese)
A timeless classic, the croque monsieur is an easily prepared French ham and cheese sandwich, long enjoyed in bistros and cafes.

Instructions

Preheat broiler with a rack 6-8 inches from the heat source.

Heat milk until hot; set aside.

Melt butter in a saucepan, then whisk in flour and cook for 2 minutes.

Gradually whisk in the hot milk; cook over medium heat for about 1 minute until the sauce boils and thickens.

Reduce heat to low and simmer, whisking frequently for 5 minutes, until the sauce is smooth and thick.

Season béchamel with salt, pepper, and optional nutmeg.

Trim bread crusts to form square slices.

Butter one side of each bread slice; flip and lightly spread Dijon mustard on the other.

Combine cheese with half of the béchamel sauce.

Spread half the cheese mixture onto one mustard-sided bread slice; lay sliced ham on the other.

Press the two bread halves together.

Heat a nonstick pan with cooking spray over medium heat.

Cook the sandwich for about 2 minutes, until the bottom is golden-brown.

Flip the sandwich, cover, reduce heat, and cook for 1-2 minutes until the second side is golden and the inner cheese melts.

Transfer the sandwich. Top with the remaining cheese mixture, then spoon the rest of the béchamel over it.

Place on a sheet tray and broil béchamel-side up for 1-3 minutes until browned. Serve immediately.
