Brown ground beef with onions in a skillet; drain thoroughly.

Transfer browned beef and onions to a 4-quart slow cooker. Stir in garlic, diced tomatoes, tomato sauce, chili powder, ground cumin, dried oregano, salt, pepper, cayenne pepper, and drained kidney beans. Cook on low for 6-8 hours until vegetables are tender.

Increase heat to high. Mix cornstarch with water until smooth, then stir into the chili. Cook uncovered for 15 minutes, or until chili thickens slightly.
