Classic Cola Cake With Frosting

Instructions

  1. Preheat the oven to 350 F (180 C).

  2. Prepare a 13" x 9" baking pan by greasing and flouring it.

  3. Combine flour and granulated sugar in a large bowl.

  4. In a medium saucepan, boil 3 tablespoons cocoa, 1 cup cola, 1 cup butter, and marshmallows over medium-high heat, stirring often.

  5. Pour the hot cocoa mixture into the flour and sugar; stir to blend.

  6. Whisk eggs, buttermilk, baking soda, and vanilla in a separate bowl; add this to the first mixture and blend well.

  7. Transfer batter to the prepared pan and bake for approximately 35 minutes, until a toothpick comes out clean.

  8. Approximately 10 minutes before the cake finishes baking, prepare the frosting: boil 1/2 cup butter, 1 tablespoon cocoa, and 6 tablespoons cola in a saucepan. Stir in confectioners' sugar and beat until smooth, incorporating chopped pecans if desired.

  9. Remove the cake from the oven and place it on a cooling rack.

  10. Spread the warm frosting over the warm cake.
