Classic Chicken Balti Curry

Instructions

  1. Combine garam masala, curry leaves, palm sugar, coriander, cumin, cinnamon, cloves, turmeric, nigella seeds, green chiles, and cardamom; set aside.

  2. Heat oil in a large pan, add lightly crushed mustard seeds, and cook for 30 seconds.

  3. Add chopped onion, reduce heat, and cook for 3 to 5 minutes until soft.

  4. Stir in garlic, ginger, and the reserved spice mixture; cook on medium heat.

  5. Add chicken pieces, stir to coat, and cook for 10 minutes, stirring occasionally.

  6. Stir in stock, tomato puree, salt, and bay leaf; reduce heat and simmer for 25 minutes until chicken is tender.

  7. Add cilantro and tomato slices, stir, and cook for 3 more minutes before serving hot.
