Classic Brined Beef Jerky

Instructions

  1. Combine water, salt, molasses, garlic, Worcestershire sauce, and black pepper in a large ziptop bag; mix thoroughly.

  2. Add trimmed beef to the brine bag, seal, and refrigerate for 12 hours or overnight.

  3. Remove beef from the brine, pat it dry, and discard the brine.

  4. Place the beef on a tray and freeze for 30 to 45 minutes until firm with slight ice crystal formation.

  5. Slice the beef into 1/4-inch thick strips and season with your preferred spice rub.

  6. Dehydrate according to manufacturer directions until stiff but still pliable, then store in an airtight container in the refrigerator.
