City Chicken: Mock Chicken Drumsticks

A vintage "city chicken" recipe from the 1900s, these mock drumsticks use ground veal, pork, or a combination.

Instructions

  1. Preheat oven to 400 F and grease a jelly roll pan.

  2. Combine ground meat, egg, milk, 1/2 cup cracker crumbs, salt, pepper, and sage; mix until blended.

  3. Divide the mixture into 16 portions and form each around a skewer into a drumstick shape.

  4. Dip each drumstick in melted butter, then roll in the remaining 1 cup cracker crumbs.

  5. Arrange drumsticks in the greased pan, drizzle with any leftover melted butter, and bake for 45 minutes until golden brown.
