Citrus Turkey Brine

Instructions

  1. Start boiling 4 cups of water in a large saucepan and dissolve the salt and sugar.

  2. Cut the lemon, lime, and orange into 8 pieces each.

  3. Add the cut citrus, onion, garlic, bay leaves, and thyme to the saucepan; reduce heat, cover, and simmer for 30 minutes.

  4. Pour this mixture into a large pot, add 12 cups of cold water, and refrigerate until completely cooled.

  5. Defrost the turkey if frozen, then place it into a large plastic container and fully submerge it in the cooled brine.

  6. Refrigerate the brining turkey for 1 hour per pound, not exceeding 24 hours.

  7. Thoroughly rinse all brine from the turkey before cooking.
