Cinnamon-Sugar Doughnut Muffins

Instructions

  1. Preheat oven to 350°F and grease two mini muffin pans.

  2. Whisk flour, baking powder, baking soda, salt, and nutmeg in a medium bowl.

  3. In a large bowl, whisk oil, brown sugar, 1/4 cup granulated sugar, and vanilla, then add egg and whisk.

  4. Alternately add dry ingredients and milk to the wet mixture, beginning and ending with dry, mixing until just combined.

  5. Fill muffin cavities with about a tablespoon of batter each and bake for 8 minutes, rotating pans halfway, until a toothpick comes out clean.

  6. While muffins bake, prepare two shallow bowls: one with melted butter, another with whisked sugar and cinnamon.

  7. Remove baked muffins; if more batter remains, grease pans and repeat the baking process.

  8. While warm, dip each muffin in melted butter, then roll in the cinnamon-sugar mixture. Transfer to a wire rack to cool.
