Instructions

  1. Prepare an 8-inch pan by lining it with aluminum foil and spraying it with nonstick cooking spray.

  2. In a heavy-bottomed saucepan, combine 1 cup of sugar and corn syrup; cook over medium heat, stirring constantly, until it boils vigorously (8-10 minutes), then continue cooking, stirring occasionally, until it reaches 280 F (soft crack stage).

  3. Meanwhile, in a separate saucepan, combine water, pectin, and baking soda; place over high heat and cook until it reaches a boil, then remove from heat to cool slightly.

  4. Once the sugar mixture reaches 280 F, return the pectin mixture to high heat and slowly stream the hot sugar mixture into it while stirring.

  5. Continue cooking, stirring constantly, for an additional minute.

  6. Remove from heat, then stir in food coloring and cinnamon oil.

  7. Pour into the prepared pan and let it set until firm.

  8. Cut the firm candy with a knife or cookie cutters, then roll the pieces in granulated sugar.
