Instructions
-
Prepare an 8-inch pan by lining it with aluminum foil and spraying it with nonstick cooking spray.
-
In a heavy-bottomed saucepan, combine 1 cup of sugar and corn syrup; cook over medium heat, stirring constantly, until it boils vigorously (8-10 minutes), then continue cooking, stirring occasionally, until it reaches 280 F (soft crack stage).
-
Meanwhile, in a separate saucepan, combine water, pectin, and baking soda; place over high heat and cook until it reaches a boil, then remove from heat to cool slightly.
-
Once the sugar mixture reaches 280 F, return the pectin mixture to high heat and slowly stream the hot sugar mixture into it while stirring.
-
Continue cooking, stirring constantly, for an additional minute.
-
Remove from heat, then stir in food coloring and cinnamon oil.
-
Pour into the prepared pan and let it set until firm.
-
Cut the firm candy with a knife or cookie cutters, then roll the pieces in granulated sugar.
