Churros (Cinnamon Sugar Fried Doughnut Sticks)
Crispy on the outside and soft within, these cinnamon sugar fried doughnut sticks are a delightful homemade treat.

Instructions

Heat 1 to 2 inches of oil to 375 F.

In a pot, combine water, buttermilk, butter, salt, and 1 tablespoon sugar; bring to a boil.

Stir in flour instantly with a heat-proof spatula until a ball forms, cooking for 1-2 minutes, then remove from heat.

Mix in vanilla, then add eggs one at a time, incorporating fully after each; add an extra egg if dough lacks shine or is too thick.

Place dough into a pastry bag fitted with a 1/2-inch wide star or round tip.

Pipe 4 to 6-inch dough lengths onto a waxed paper-lined cookie sheet and freeze until firm.

Carefully transfer firm churros into the hot oil.

Fry churros in batches for approximately 2 minutes per side until golden brown; drain on paper towels.

Combine 1/2 cup sugar and cinnamon, then roll warm churros in the mixture.

To fill, use a pastry bag with a small round metal icing tip to poke a skewer through the churro lengthwise, then pipe in filling.
