Chuckwagon Ground Beef Soup With Beans

A quick and hearty family meal, this vegetable beef soup combines ground beef with tomatoes, onion, carrots, chile peppers, and beans.

Instructions

  1. Cook bacon in a Dutch oven until crisp, then remove and drain.

  2. In the same pot, brown ground beef with onions and celery until no longer pink, then add garlic and cook for 1 minute.

  3. Stir in carrots, beef broth, tomatoes, peppers, Worcestershire sauce, salt, chili powder, and chipotle or cayenne pepper.

  4. Bring to a boil, then reduce heat to low, cover, and simmer for 30 minutes until vegetables are tender.

  5. Drain canned beans and add to the stew; season with pepper and additional salt if needed.

  6. Continue to simmer for 15 minutes.
