Christmas Strudel

Instructions

  1. Preheat the oven to 350 F/180 C.

  2. In a bowl, combine mincemeat, marzipan, almonds, mixed spice, sugar, peeled and chopped apples, lemon zest, and lemon juice. Add finely processed breadcrumbs; stir thoroughly.

  3. Grease a baking tray with melted butter.

  4. On baking parchment, layer four phyllo sheets, brushing each with melted butter.

  5. Spoon the filling onto the phyllo's center, leaving 1-inch borders at both ends.

  6. Fold the short ends over the filling, then fold one long side and roll up using the parchment.

  7. Brush the rolled strudel with butter and bake for 20-30 minutes until golden and crisp.

  8. Serve hot or cold, dusted with icing sugar.
