Christmas Spiced Custard Sauce

Instructions

  1. Combine milk, cream, and spices in a saucepan; bring to a gentle boil, then simmer for 5 minutes to infuse.

  2. Whisk sugar and egg yolks until light and pale.

  3. Strain the infused milk mixture through a sieve.

  4. While continuously whisking the egg mixture, slowly pour in the warm, strained milk.

  5. Strain the combined custard mixture back into the saucepan.

  6. Add vanilla seeds and stir over low heat until the custard thickens, taking care to prevent curdling.

  7. Remove the thickened custard from heat and strain once more before serving hot.
