Christmas Rum Sauce
A delicious make-ahead rum sauce designed to complement Christmas pudding.

Instructions

Slowly melt butter, then incorporate flour with a wooden spoon to form a thick roux, cooking for 1 minute.

Gently warm milk and spices in a separate pan, avoiding a boil.

Reduce heat under the roux, then strain the warmed milk into it.

Vigorously whisk the sauce for at least 3 minutes until smooth, thick, and glossy, continuously stirring to prevent sticking.

Add sugar and whisk until dissolved, then cook on low heat, stirring occasionally, adjusting consistency with milk if desired.

Finally, stir in the rum.

Cool completely, cover, and refrigerate if not serving immediately. Serve over Christmas pudding or in a separate jug.
