Christmas Cupcake

Instructions

Preheat the oven to 160 C/Fan 180 C/Gas 4.

Beat butter and sugar in a large bowl until light and fluffy.

Stir in vanilla, then add eggs one by one, beating well after each addition.

Sift flour and baking powder, then fold into the butter-sugar mix in three parts until just combined.

Gently stir in mincemeat, spices, and brandy, if desired.

Fill 12 cupcake liners, placed in a tin, two-thirds full with the batter.

Bake for 20 minutes until golden brown and risen, then cool on a wire rack.

For the icing, combine liqueur, food coloring, and confectioner's sugar; mix until smooth, adjusting sugar for desired consistency.

Drizzle icing over cooled cupcakes and decorate as desired before serving.
