Instructions

  1. Preheat the oven to 160 C/Fan 180 C/Gas 4.

  2. Beat butter and sugar in a large bowl until light and fluffy.

  3. Stir in vanilla, then add eggs one by one, beating well after each addition.

  4. Sift flour and baking powder, then fold into the butter-sugar mix in three parts until just combined.

  5. Gently stir in mincemeat, spices, and brandy, if desired.

  6. Fill 12 cupcake liners, placed in a tin, two-thirds full with the batter.

  7. Bake for 20 minutes until golden brown and risen, then cool on a wire rack.

  8. For the icing, combine liqueur, food coloring, and confectioner's sugar; mix until smooth, adjusting sugar for desired consistency.

  9. Drizzle icing over cooled cupcakes and decorate as desired before serving.
