Christmas Breakfast Casserole
A savory ham, bacon, and cheese breakfast casserole, ideal for preparing in advance and serving to many guests.

Instructions

Preheat oven to 375 F and grease a 9x13-inch casserole dish.

Layer and toss tater tots, bacon, ham, and 1 1/2 cups cheddar cheese in the prepared dish.

In a separate bowl, whisk together eggs, cream of mushroom soup, milk, sour cream, pepper, salt, onion powder, and hot sauce.

Pour the egg mixture over the tater tot layer. Cover with foil and bake for 45-50 minutes, or until eggs are nearly set.

Remove foil, then top with the remaining 1/2 cup cheddar cheese and bell peppers.

Increase oven temperature to 425 F and bake for an additional 20 minutes, until cheese is melted and edges are browned.
