Chow Chow Green Tomato Relish Recipe

Instructions

  1. Start boiling water in a large canning kettle; separately, wash jars and heat lids in a small saucepan.

  2. Combine chopped vegetables with salt in a large nonreactive bowl, stir, and let stand 4 hours or refrigerate overnight.

  3. Drain and rinse the vegetables thoroughly.

  4. In a large nonreactive kettle, combine vinegar, brown sugar, celery and yellow mustard seeds, and red pepper flakes; boil, then simmer 5 minutes.

  5. Add drained vegetables, bring back to a boil, then simmer 10 minutes.

  6. Using a slotted spoon, pack vegetables into prepared jars, leaving 1/4-inch headspace; cover with pickling liquid.

  7. Wipe jar rims, apply lids, and secure with rings.

  8. Place jars in the boiling canning kettle, ensuring water covers them by at least 1 inch. Cover and boil for 10 minutes.

  9. Remove jars to a rack, cool completely, and verify seals.
