Chorizo Shakshuka

Instructions

  1. Preheat the oven to 450 F. In a large cast-iron skillet, heat olive oil over medium-high heat. Add onion and cook for 5 minutes until soft.

  2. Stir in chorizo and cook until browned; drain excess fat if preferred.

  3. Add canned tomatoes with juices, tomato sauce, salt, cayenne, and cumin. Stir, then cook on medium heat for 10 minutes, stirring occasionally. (If using fresh tomatoes, add 1/4 to 1/2 cup water).

  4. Form 4 wells in the tomato mixture and crack one egg into each.

  5. Bake in the preheated oven for approximately 10 minutes, or until eggs reach desired doneness.

  6. Remove from oven, crumble cotija cheese over the top, sprinkle with cilantro, and serve.
