Instructions

  1. Preheat the broiler to high, positioning a rack in the upper-middle oven section.

  2. Cook two 9-ounce packages of Mexican pork chorizo in a large skillet over medium-high heat for about 5 minutes, until its color deepens and texture firms.

  3. Using a slotted spoon, transfer half of the cooked chorizo to a small, broiler-safe pan, spreading it evenly, and keep the remaining chorizo warm.

  4. Evenly distribute 10 ounces of 1/2-inch cubed Oaxaca cheese over the chorizo layer.

  5. Broil for 5 to 10 minutes until the cheese is melted, bubbling, and lightly browned.

  6. Remove from the oven, cool slightly, then top with the reserved chorizo and optional finely chopped tomato, onion, or cilantro.

  7. Serve immediately with tortilla chips.
