Chocolate Wafer Cookies

Instructions

  1. Preheat the oven to 350 F and line baking sheets with parchment paper.

  2. In a large bowl, cream sugar and butter.

  3. Mix in salt, baking powder, egg, and vanilla extract.

  4. Incorporate flour, black cocoa powder, and Dutch-process cocoa powder until a dough forms.

  5. Cover the dough and chill for 30 minutes.

  6. Dust a work surface with cocoa powder. Roll dough to 1/8-inch thickness and cut into 2-inch round cookies.

  7. Place cookies on prepared sheets and bake for 10 to 12 minutes.

  8. Transfer cookies to wire racks to cool completely.
