Chocolate Wafer Cookies

Instructions

Preheat the oven to 350 F and line baking sheets with parchment paper.

In a large bowl, cream sugar and butter.

Mix in salt, baking powder, egg, and vanilla extract.

Incorporate flour, black cocoa powder, and Dutch-process cocoa powder until a dough forms.

Cover the dough and chill for 30 minutes.

Dust a work surface with cocoa powder. Roll dough to 1/8-inch thickness and cut into 2-inch round cookies.

Place cookies on prepared sheets and bake for 10 to 12 minutes.

Transfer cookies to wire racks to cool completely.
