Instructions

  1. Preheat the oven to 3500F and line 12 muffin cups with paper liners.

  2. In a mixer, combine boiling water, butter, granulated sugar, and cocoa powder; beat on low speed until smooth and the sugar dissolves.

  3. Sift flour, salt, baking powder, and baking soda into a separate bowl.

  4. Whisk egg, sour cream, and vanilla extract together in a small bowl.

  5. With the mixer on low, alternately add the sifted dry ingredients and the whisked egg mixture to the cocoa mixture, mixing until just combined.

  6. Fill cupcake cups two-thirds full with batter and bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean.

  7. Cool cupcakes in the pan for 5-10 minutes, then transfer to a wire rack to cool completely.

  8. Frost cooled cupcakes as desired.
