Instructions
-
Preheat oven to 350 F and grease and flour a 9x13-inch baking pan.
-
Sift flour, sugar, cocoa powder, baking soda, and salt into a large bowl.
-
In a separate bowl, whisk eggs, sour cream, vegetable oil, and vanilla.
-
Stir the wet mixture into the dry ingredients, then add hot coffee or water and stir until the batter is smooth.
-
Pour batter into the prepared pan and bake for 40 minutes, or until a toothpick comes out clean. Cool the cake completely on a rack.
-
For the frosting, simmer 1 inch of water in a medium saucepan. Place chocolate chips and butter in a heat-safe bowl over the simmering water, ensuring the bowl does not touch the water.
-
Stir until the chocolate and butter are melted and smooth; then let cool slightly.
-
Remove the bowl from heat. Whisk in sour cream, vanilla, and salt. Sift confectioners' sugar over the mixture and beat with an electric mixer until creamy and spreadable, adding more sugar as needed.
-
Spread the frosting over the cooled cake, then slice and serve.
