Chocolate Roughs

A beloved New Zealand treat, these chocolate and cornflake cookies are finished with chocolate icing and flaked almonds.

Instructions

  1. Preheat oven to 350F (180C) and line a baking sheet.

  2. Cream butter and superfine sugar until light and fluffy.

  3. Sift flour and cocoa powder, then mix into the butter mixture.

  4. Fold in cornflakes.

  5. Form 1.5 teaspoon portions of dough into flattened balls and place them 2 inches apart on the prepared baking sheet.

  6. Bake for 10-15 minutes, then cool on a wire rack.

  7. Prepare icing by combining confectioners' sugar, unsweetened cocoa powder, and water, mixing until smooth and creamy.

  8. Spoon icing onto each cooled cookie and decorate with flaked almonds.
