Chocolate Pralines
Chocolate pralines are a delectable treat combining the classic crumbly, nutty texture with rich semisweet chocolate and toasted pecans.

Instructions

Line a baking sheet with foil and spray with nonstick cooking spray; reserve 3 tablespoons of chocolate chips.

In a medium saucepan, combine both sugars, cream, butter, and salt over medium heat; stir until dissolved, then brush down pan sides with a wet pastry brush and insert a candy thermometer.

Cook without stirring until the thermometer reaches 240F, then remove from heat, take out the thermometer, and immediately stir in the pecans and remaining chocolate chips.

Stir vigorously until the chocolate melts, the candy lightens and becomes opaque, and starts to hold its shape while still being easy to stir.

Quickly drop small spoonfuls of the candy onto the prepared baking sheet, adding a spoonful of very hot water and stirring to loosen if the mixture stiffens.

Melt the reserved chocolate chips in a small microwave-safe bowl for about 40 seconds, then transfer to a zip-close bag, snip a corner, and drizzle over the pralines.

Refrigerate the pralines for 15 minutes to set the chocolate, then store them in an airtight container at room temperature.
