Chocolate Mousse Pie Recipe

Preheat the oven to 375 F and spray an 8-inch pie dish.

In a food processor, combine crushed cookies, sugar, and melted butter, then press the mixture evenly into the prepared pie dish.

Bake for 12 minutes until set, then cool the crust.

Separate eggs; whisk yolks and sugar until frothy.

Heat 3/4 cup cream until steaming, then stir in chocolate until melted and cool for 3 minutes.

Slowly whisk the chocolate cream into the egg yolk mixture, then cool to room temperature for 30 minutes.

In a separate bowl, beat egg whites until stiff peaks form, then gently fold them into the chocolate-egg yolk mixture in two additions.

Beat the remaining 1/4 cup cream until stiff peaks form, then fold it into the mousse mixture.

Pour the mousse into the baked crust and refrigerate for at least 6 hours.
