Chocolate Mississippi Mud Pie

Instructions

  1. Preheat the oven to 350°F (180°C).

  2. For an optional homemade crust, combine graham cracker crumbs with confectioners' sugar, 6 tablespoons melted butter, and a dash of salt; press into a 9-inch pie plate and bake for 8 minutes, then set aside.

  3. Melt butter and unsweetened chocolate in a small saucepan over medium-low heat, stirring until blended, then allow to cool slightly.

  4. Beat eggs in a medium bowl; then stir in corn syrup, granulated sugar, and vanilla extract before incorporating the chocolate mixture until well blended.

  5. Place the pie crust on a baking sheet, pour the filling into the shell, and transfer to the oven.

  6. Bake for about 40 minutes, or until the filling is set with a very slight jiggle.

  7. Serve the pie slightly warm or cold with desired toppings.
