Instructions

Combine cocoa powder and cold water in a small saucepan, whisking until smooth.

Stir in the sugar and torn mint leaves.

Place the saucepan over medium heat and bring the mixture to a boil, stirring constantly to dissolve the sugar.

Reduce heat and simmer for 3 to 5 minutes, allowing the syrup to thicken and become glossy.

Remove from heat and let cool completely.

Strain the cooled syrup through a fine mesh sieve into a clean glass jar.

Cover and refrigerate for up to three weeks; reheat the syrup if sugar crystallization occurs.
