Instructions

  1. Combine cocoa powder and cold water in a small saucepan, whisking until smooth.

  2. Stir in the sugar and torn mint leaves.

  3. Place the saucepan over medium heat and bring the mixture to a boil, stirring constantly to dissolve the sugar.

  4. Reduce heat and simmer for 3 to 5 minutes, allowing the syrup to thicken and become glossy.

  5. Remove from heat and let cool completely.

  6. Strain the cooled syrup through a fine mesh sieve into a clean glass jar.

  7. Cover and refrigerate for up to three weeks; reheat the syrup if sugar crystallization occurs.
