Instructions

  1. Preheat the oven to 350 F (180 C/Gas Mark 4) and grease a 9x5x3-inch loaf pan.

  2. Beat sugar and butter together until well blended.

  3. Add salt, vanilla extract, baking soda, baking powder, and cocoa powder; mix until blended.

  4. Incorporate eggs one at a time, beating well after each addition.

  5. Alternately add flour in thirds and milk in halves, mixing on low speed after each addition until just combined, being careful not to overbeat.

  6. Pour the batter into the prepared pan and spread evenly.

  7. Bake for 60 to 65 minutes until a toothpick inserted in the center comes out clean; cool in the pan for 10 minutes, then remove and cool completely on a rack.

  8. For the glaze, sift confectioners' sugar into a bowl.

  9. Melt butter in a saucepan over low heat.

  10. Whisk in cocoa powder and milk, cooking and stirring until the mixture thickens.

  11. Remove from heat, then whisk in the sifted confectioners' sugar, adjusting consistency with more milk or sugar as desired.

  12. Glaze the cooled cake.
