Instructions

  1. Place bittersweet chocolate in a bowl.

  2. Heat dulce de leche and heavy cream in a saucepan over medium heat, whisking until combined and just bubbling.

  3. Pour hot cream over chopped chocolate, let sit for one minute, then whisk until smooth.

  4. If lumps remain, process ganache in a food processor or blender until silky.

  5. Transfer ganache to a bowl, cover with cling wrap, and refrigerate for about 1 hour until firm.

  6. Line a baking sheet and place cocoa powder in a shallow bowl.

  7. Scoop ganache into small balls, dust hands with cocoa, and roll until round. Repeat for all ganache. Let truffles sit overnight at room temperature (60-70F) for optimal skin, or refrigerate for 45 minutes to firm.

  8. Melt chocolate candy coating in 30-second microwave intervals, stirring until smooth.

  9. Dip each truffle in melted chocolate, letting excess drip, then place on the prepared baking sheet. While wet, sprinkle with chopped candied nuts. Repeat for all truffles.
