Instructions

  1. Prepare an 8x8 or 13x9 baking pan by lining it with foil and spraying with nonstick cooking spray.

  2. In a large saucepan, combine sugar, corn syrup, honey, and water; stir until the sugar moistens, then wipe down the pan sides with a wet pastry brush.

  3. Insert a candy thermometer and cook the mixture over medium heat, without stirring, until it reaches 300 F.

  4. Remove from heat, quickly whisk in baking soda, then immediately pour the foaming candy into the prepared pan.

  5. Allow the honeycomb to cool and harden completely, then break it into small pieces.

  6. Melt chocolate and shortening together in a microwave-safe bowl, stirring every 30 seconds until smooth.

  7. Dip each honeycomb piece into the melted chocolate using two forks, place them on the baking sheet, and refrigerate until the chocolate is set.
