Instructions

  1. Preheat oven to 375 F.

  2. In a small bowl, combine flaxseed meal and water; let gel for 5 minutes.

  3. In a large bowl, cream margarine and sugar until smooth.

  4. Mix in the gelled flaxseed mixture, vanilla, salt, cinnamon, and baking powder.

  5. Blend in cocoa powder, then soy milk.

  6. Incorporate millet flour, buckwheat flour, and 1/3 cup almond flour.

  7. By hand, mix in 1 cup chocolate chips and 1/4 cup almond flour.

  8. Roll dough into 1 1/2 inch balls; place on an ungreased cookie sheet.

  9. Bake for 10 minutes, until fragrant with crispy edges.

  10. Cool cookies completely on the cookie sheet.

  11. Melt 1/2 cup chocolate chips, drizzle over cookies, and dust with cinnamon.
