Instructions

Preheat the oven to 350 F and line two baking sheets with parchment paper.

If using whole oats, blend them until a fine flour.

Combine sunflower butter, brown sugar, and granulated sugar in a large bowl.

Mix in oat flour, baking powder, and salt.

Stir in egg, oil, and vanilla extract until well combined.

Drop dough by teaspoonfuls onto prepared sheets, spacing them one inch apart; optionally press with a fork for a crosshatch pattern.
