Chocolate Chip Sunbutter Cookies

Instructions

  1. Preheat the oven to 350 F and line two baking sheets with parchment paper.

  2. If using whole oats, blend them until a fine flour.

  3. Combine sunflower butter, brown sugar, and granulated sugar in a large bowl.

  4. Mix in oat flour, baking powder, and salt.

  5. Stir in egg, oil, and vanilla extract until well combined.

  6. Fold in the chocolate chips.

  7. Drop dough by teaspoonfuls onto prepared sheets, spacing them one inch apart; optionally press with a fork for a crosshatch pattern.

  8. Bake for 12 to 14 minutes until firm and golden.

  9. Let cookies cool on the baking sheets for 5 minutes before moving to cooling racks.
