Chocolate Chip Lava Cookies

Instructions

  1. Preheat oven to 350°F and lightly grease a 12-cup muffin pan.

  2. Melt 2/3 cup chocolate chips in a microwave-safe bowl; set aside.

  3. In a separate small bowl, combine flour, salt, baking soda, and baking powder; set aside.

  4. Cream butter and both sugars.

  5. Mix in egg and vanilla until blended, then incorporate the flour mixture until just combined.

  6. Stir in the remaining chocolate chips.

  7. Place 2 tablespoons of dough into each muffin cup, pressing to flatten and create a small well.

  8. Spoon 1 tablespoon of melted chocolate into each well.

  9. Refrigerate the cups for 3-4 minutes.

  10. Add 2 more tablespoons of dough on top of each cup, pressing the edges to seal the melted chocolate inside.

  11. Bake on the bottom rack for 23-25 minutes until golden brown.

  12. Remove from oven, run a knife around the edges to loosen, and cool for 15 minutes.

  13. Invert the muffin pan onto a cookie sheet to remove the cookies. Serve immediately with vanilla ice cream.
