Chocolate Chip Cheesecake With Chocolate Topping

Instructions

Preheat oven to 350 F (180 C).

Combine chocolate cookie crumbs and butter, then firmly press into a 9-inch springform pan.

Bake crust for 5 minutes.

Beat cream cheese until fluffy. Gradually add sugar, then eggs one at a time, beating after each addition.

Stir in vanilla and 2/3 cup chocolate chips.

Pour mixture into the crust and bake for 40 minutes.

Turn off oven, leave door ajar, and let cheesecake sit for 30 minutes.

Remove and cool on a wire rack, then cover and refrigerate for at least 4 hours.

Melt remaining 2/3 cup chocolate chips with whipping cream over low heat until smooth.

Spread or drizzle ganache over the cheesecake and chill thoroughly before serving.
