Chocolate Chip Cheesecake With Chocolate Topping

Instructions

  1. Preheat oven to 350 F (180 C).

  2. Combine chocolate cookie crumbs and butter, then firmly press into a 9-inch springform pan.

  3. Bake crust for 5 minutes.

  4. Beat cream cheese until fluffy. Gradually add sugar, then eggs one at a time, beating after each addition.

  5. Stir in vanilla and 2/3 cup chocolate chips.

  6. Pour mixture into the crust and bake for 40 minutes.

  7. Turn off oven, leave door ajar, and let cheesecake sit for 30 minutes.

  8. Remove and cool on a wire rack, then cover and refrigerate for at least 4 hours.

  9. Melt remaining 2/3 cup chocolate chips with whipping cream over low heat until smooth.

  10. Spread or drizzle ganache over the cheesecake and chill thoroughly before serving.
