Chocolate Banana Fudge

Creamy, rich chocolate banana fudge is easily prepared with real banana mixed directly into the candy.

Instructions

  1. Line an 8x8-inch pan with foil and spray it with nonstick cooking spray.

  2. Combine mashed banana with enough whole milk to total 3/4 cup liquid.

  3. In a medium saucepan, combine the banana-milk mixture, sugar, and salt. Stir over medium-high heat until the sugar dissolves.

  4. Bring the mixture to a boil, insert a candy thermometer, and continue cooking and stirring until it reaches 230 F (110 C).

  5. Remove the pan from heat, then add chocolate, cubed butter, banana extract, and mini marshmallows. Stir until completely smooth.

  6. Scrape the fudge into the prepared pan and smooth it into an even layer.

  7. Cool and set the fudge at room temperature overnight or refrigerate for at least 3 hours.

  8. Once set, remove the fudge from the pan, peel off the foil, and cut into 1-inch pieces.
