Chinese Winter Melon Soup

Instructions

  1. Wash, peel, deseed, and cut 1/2 pound winter melon into 2-inch pieces.

  2. Start boiling water in a large saucepan with the prepared winter melon; reduce heat and simmer for 20 minutes until tender.

  3. Meanwhile, reconstitute 4 dried shiitake mushrooms in cold water for 20 minutes, then squeeze dry.

  4. Add the rehydrated mushrooms, 2 cups chicken broth, 2 to 3 ginger slices, 1/4 cup diced cooked ham, and salt and pepper to the simmering soup.

  5. Simmer on low heat for another 20 minutes to infuse all flavors.

  6. Garnish each of 4 bowls with sliced green onion and serve immediately.
