Chinese West Lake Beef Soup

A traditional Chinese West Lake beef soup featuring ground beef, chicken stock, eggs, and green onions makes for an excellent starter.

Instructions

  1. Combine seasonings with ground beef and cornstarch, then marinate for 15 minutes.

  2. Bring chicken stock to a boil.

  3. Stir in the marinated beef, breaking up lumps with chopsticks, then add sugar and pepper.

  4. Return to a boil, then simmer for a few minutes to cook the beef; season with salt as needed.

  5. Optionally, stir in 1 1/2 tablespoons of cornstarch mixed with water to thicken.

  6. Slowly pour in egg whites in a steady stream, stirring with a fork to create thin ribbons.

  7. Garnish with green onion and serve.
