Chinese Velvet Chicken Recipe

Instructions

  1. Slice chicken against the grain into 3/4- to 1-inch cubes.

  2. In a bowl, mix egg white and cornstarch, then thoroughly coat the chicken cubes with the mixture.

  3. Place the coated chicken in a sealed container and marinate in the refrigerator for 30 minutes.

  4. Prepare paper towels or a colander for draining the cooked chicken.

  5. Heat 2 cups of oil in a wok to 180 F.

  6. Add chicken cubes and cook for approximately 30 seconds until they turn white, separating them as needed.

  7. Promptly remove and drain the chicken.

  8. Finish cooking the velveted chicken by stir-frying with your preferred vegetables and sauces until fully cooked.
