Chinese Swallow's Nest Soup With Rock Sugar

Soak the bird's nests in cold water for several hours or overnight, then rinse and remove any loose feathers.

Boil the nests twice: first, bring a pot of water to a boil, simmer for 5 minutes, drain; then repeat the process, drain, rinse, and squeeze dry.

Combine the prepared bird's nests with 4 cups of water in a pot, bring to a boil, and simmer for up to 2 hours until very soft.

Add rock sugar, stir until dissolved, and serve the soup hot.
