Chinese-Style Beef Fried Rice

A quick and easy beef stir-fry features tender marinated beef, various vegetables, and leftover rice.

Instructions

  1. Combine dark soy sauce, light soy sauce, sugar, sesame oil, white pepper, and cornstarch in a large bowl, then add and toss beef to coat, letting it marinate for at least 10 minutes.

  2. Beat egg with salt and set aside.

  3. Heat a wok on high heat, add 1 tablespoon oil. Stir-fry garlic until aromatic, then add onion and stir-fry for 1-2 minutes until softened.

  4. Add marinated beef to the wok and stir-fry until it changes color and browns slightly.

  5. Add remaining 2 tablespoons oil and reduce heat to medium. Add rice, peas, and shredded carrot, stirring to combine and heat through, breaking up clumps.

  6. Create space in the wok, pour in the beaten egg, scramble, then mix with the rice and vegetables.

  7. Stir in green onion; season with additional salt and pepper to taste.
