Chinese Stir-Fry Shrimp in Black Bean Sauce

Instructions

  1. Rinse and pat dry the shrimp.

  2. Marinate shrimp with the specified ingredients for 15 minutes.

  3. Combine sauce ingredients in one bowl; in another, mix 1 tablespoon cornstarch with 2 tablespoons water, then set both aside.

  4. Heat oil in a wok or pan.

  5. Once hot, stir-fry black bean sauce and ginger until fragrant.

  6. Add shrimp and stir-fry briefly; push aside, then add bell pepper and stir-fry for about a minute, adding liquid if needed.

  7. Push shrimp and vegetables to the pan's edges. Add the prepared sauce to the center, bring to a boil, then stir in the cornstarch mixture to thicken.

  8. Combine sauce with shrimp and vegetables, stir in scallions, then serve hot over rice.
