Instructions

  1. Marinate scallops with rice wine, salt, and white pepper.

  2. Heat 1 tablespoon of oil in a wok; stir-fry garlic, ginger, and chili until fragrant.

  3. Add carrots and stir-fry for 1 minute.

  4. Add yellow and red peppers; stir-fry for 30 seconds.

  5. Incorporate snow peas, then add stock and cook on high heat until the stock reduces by about one-third.

  6. Add marinated scallops and stir-fry for a few minutes until cooked through.

  7. Combine potato starch with cold water to form a slurry, then stir into the wok and bring to a boil. Serve immediately.
