Chinese Stir-Fried Beef With Onions

A satisfying stir-fried beef dish features the distinct flavor of two types of onions, yellow and green.

Instructions

  1. Cut beef against the grain into 1/2-inch strips.

  2. In a large bowl, marinate beef with light soy sauce, rice wine, sesame oil, black pepper, and cornstarch for 15 minutes.

  3. In a small bowl, combine dark soy sauce, sugar, and rice wine; set aside.

  4. Heat a wok with 2 tablespoons oil. Briefly stir-fry ginger and garlic, then add yellow onions and cook until crisp-tender.

  5. Remove cooked onions from the wok and set aside.

  6. Add 1 tablespoon oil to the wok if necessary. Stir-fry the marinated beef until it changes color.

  7. Add water to the wok to create a gravy.

  8. Return the reserved onions to the wok, mix well, and add the dark soy sauce mixture.

  9. Stir in green onions and briefly stir-fry to blend all flavors.

  10. Serve hot with rice.
